Executive Chef Alex Ensor brings an extraordinary commitment to the finer things in life for Buddha Bar’s A La Carte selection. Having held the position of Head Chef for the last 9 years at some of Australia’s top restaurants and at Shy restaurant in Kemang, Jakarta, the Chef now enters the divine way of Buddha Bar. The standard of cuisine produced at his previous establishments - all of which have been awarded “Hat” awards by Sydney Morning Herald – is comparable to that of Michelin Star restaurants in Europe and America.
The most influential period in Alex’s career was the 6 years spent at 3 Hat restaurant Guillaume at Bennelong in Sydney as Head Chef working alongside renowned Chef Guillaume Brahimi, who himself was a long time protégé of Joel Robuchon in Paris. Since departing from Guillaume at Bennelong, Alex has assumed three more Head Chef Positions, earning himself 1 and 2 hats respectively.
Alex’s cuisine roots in Classic French techniques, but fusing over to the East after discovering the Asian delights after his move to Jakarta. He uses a modern interpretation of texture and flavor combinations. His inspiration is global and his cuisine adapts to the environment based on the local ingredients available. His dishes have style, adaptation and culinary discipline leading to mouth watering creations very few have seen before.
